This cobbler is a fabulous dessert recipe for any size gathering – from 2 to 10. It also works great for pot-luck gatherings, as it can be made ahead of time & easily transported.
Ingredients:
1 cups sugar
2 cups self rising flour (Bisquick or White Lily work great)
2 eggs
1 stick of butter – softened
fruit filling* (peaches are best, but any fruit will work)
cinnamon & sugar to taste
Preheat oven to 350°F**.
In a medium bowl, mix sugar, flour, egg, and butter. Set aside.
In a 9″x12″ baking pan, pour fruit* to fill bottom at least 1-1/2 inch. Cover fruit filling with “cobbles” of batter, and sprinkle with cinnamon and sugar.
Tent with foil & bake approx. 30 – 45 min. Remove foil and bake an additional 15 minutes, or until browned and a toothpick inserted in the center comes out clean.
Serve with ice cream. Vanilla or cinnamon both taste wonderful.
*If using fresh or home frozen fruit, sprinkle tapioca through out. (minute tapioca works well) When I make a berry cobbler, I usually cook the berries down on the stove some before adding them to the baking pan. That way you can taste to see how much sugar – if any – needs to be added to the fruit.
**If using a glass pan, reduce oven to 325°F.
This can be made in a variety of pan sizes. I will often prep a few smaller aluminum pans, cover, and toss in the freezer for later. Bake with about 3 months. It works very well with frozen fruit too, so you can have a taste of Summer in January. Semi-thaw the fruit & add to the pan, top with batter, & bake.
This recipe has been passed down for at least 4 generations now. It’s one of the easiest desserts to make, and can be made with almost any fruit except citrus. Peach & blueberry are a very good combination. Use what you have available, and enjoy!
